#1 : Oreo Muffins

I've been reading this blog since I don't know when. It is the Happy Home Baking. That is the blog where I got the recipe for dog horlick cookies which I found really cute. I made them on Easter and it was a success. Then yesterday I tried to bake Oreo muffins. It was a success too! Except that I forgot to put the caster sugar after i sifted a little bit of flour. But I fixed it. The recipe makes 6 muffins and it was my first time making muffins from the scratch! (I used to make instant muffins where you can buy it from Woolworths/Coles - where basically you just mix what's inside the box and put it in the oven). My muffins are heart-shaped because I used the heart-shaped muffin tray which I bought almost 2 years ago and I have never used it!

Ingredients:
(makes 6 muffins)

  • 2oz (56g) butter room temperature
  • 35g caster sugar 1 egg, lightly beaten
  • 105g plain flour
  • 1 teaspoon baking powder
  • 1/2 cup (118ml) fresh milk
  • Oreo cookie chunks
Method :
  • Preheat oven to 190 deg C.
  • Cream butter until soft with mixer.
  • Add in sugar and beat until light and fluffy.
  • Add in the egg gradually. Beat well each time egg is added.
  • Sift flour and baking powder. Fold flour mixture into the butter mixture, alternating with the milk.
  • Fill each muffin cup with batter till half full. Sprinkle several oreo cookie chunks on top, then cover with a spoonful of batter.
  • Bake for 25 mins, until lightly browned. Cool the muffins in the pan for 5 mins before transfering to a wire rack to cool.
I wouldn't make this Oreo muffin again in the future. It doesn't taste as good as what I thought it would be. I cannot taste the Oreo. The Oreo chunks had soften and melted in the sponge. The muffin is too big - maybe I put too much batter on each cup. Or maybe I need to put more cookies. Well chocolate chips sound better than Oreo. From scale 1 to 10, I'd give it 5.
